Party Food from Cajun Ed at Hebert’s Specialty Meats
I can feel it in the air. The excitement, the people, the food, and … oh yes, football too. Super Bowl 51 is almost here and we’ve got the menu for your party straight from Cajun Ed of Hebert’s Specialty Meats in Tulsa.
“The perfect dishes for Super Bowl parties and for the colder time of year include red beans and rice, smoked chicken and andouille gumbo with a side of our amazing jambalaya,” says Ed. “Crawfish étouffée also sounds good and don’t forget to serve the guys mouth-watering boudin balls and alligator bites.” Alligator? Yes, your friends will remember you for serving alligator!
Ed also recommends Hebert’s wings. “One item that is a real fan favorite for the Super Bowl is our one-of-a-kind, incredible wings. These are not to be confused with boneless white meat wings. This wing is deboned chicken that is stuffed with jalapeno chicken sausage. Grill’m, bake’m or fry’m. Oh, can you say C’est bon?”
Ed and his family are true Cajuns. They moved here and opened the specialty meat shop in 1998 at 2101 East 71st street, just west of 71st and Lewis in the big red house. Many of Herbert’s guests and employees are Cajuns as well. “There are three ways to become a Cajun: by blood, by marriage, and by the back door. Anyone who wants to have a good time is welcome,” says Ed.
Hebert’s sells meats, seafood, prepared dishes such as gumbo and crawfish hot tamales, beans, hot sauce and spices. Ed’s goal is to provide his customers with a consistent, high quality product with true Cajun flavor. Just check out his custom spices with more than a dozen custom blends. “Our Cajun spice is a blend of seasonings that is uniquely ours mixed with a little love. This is how we cook,” says Ed.
